What desserts are rich in potassium?
I'm trying to find some interesting dessert recipes rich in potassium for someone with high blood pressure. Any help would be appreciated.

Besides bananas, there are other stuff richer in potassium that can be ingredients in desserts: sweet potato, plain yogurt, carrot juice, molasses, soybeans. Other foods with relatively high potassium levels include dried peaches & apricots, milk, cantaloupe & honeydew melon, orange juice.
A few suggestions are:
Sweet potato - sweet potato pie, Chinese sweet potato soup (with ginger & rock sugar), sweet potato fritters
Carrot juice - carrot jelly/agar agar, carrot juice sorbet
Soybeans - sweetened soyabean curd, soybean cookies, shortcrust pie pastry with soybean (mashed & cooked)
Cantaloupe/Honeydew melon - Honeydew Sago, mixed fruit salad with melon balls
banana shakes
Ingredients:
1 cup milk
2 tablespoons peanut butter
1 tablespoon honey
2 large ripe frozen bananas
Directions:
In a blender, combine all ingredients; cover and process until blended. Pour into chilled glasses. Serve immediately. Yield: 2-3 servings.

freeze sliced peeled banana. then cream the banana in a blender to make a frozen banana dessert.

any thing with bananas is high in potassium to look for more things with potassium look for it on the back or burn it ( OUTSIDE ) with a torch and it will burn with a purple flame if it's high in potassium

recipe for banana cake
Low fat Banana Cake
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup granulated sugar
1/4 cup brown sugar
4 egg whites
1/4 cup margarine
1 1/2 cups mashed, ripe bananas
1/2 cup low fat sour cream
1 teaspoon vanilla
1/2 cup mini chocolate chips
1/2 cup finely chopped walnuts
Preheat over to 350 degrees. Spray a 9×13 inch baking pan with cooking spray and set aside.
With a mixer, beat together the granulated sugar, brown sugar, eggs, and butter on medium speed. Add bananas, sour cream, and vanilla and beat until smooth. Gradually ad the flour, baking powder, baking soda, and salt, mix well. Fold in the chocolate chips and nuts.
Spread the batter evenly in the baking pan with a spatula. Bake 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack before cutting.
This cake is decadent enough that it does not need a frosting to complete it. However, if you do not like a plain cake just add a dollop of fat free whipped cream and you will have a delicious snack or dessert

***Pear and Raisin Crumble***
2 1/2 pounds ripe pears, peeled, quartered, cored, cut into 1/3-inch-thick slices 1/3 cup plus 1/2 cup (packed) dark brown sugar
6 tablespoons crushed ginger cookies (such as Ginger Man), divided
2 teaspoons ground cinnamon, divided
1/2 cup raisins
1/2 cup all purpose flour
6 tablespoons (3/4 stick) chilled butter, diced
3/4 cup walnut pieces
Preparation:
Preheat oven to 400°F. Mix pears, 1/3 cup sugar, 2 tablespoons crushed cookies, and 1 teaspoon cinnamon in 11×7x2-inch glass baking dish. Mix in raisins.
Using fingertips, press together flour, butter, 1/2 cup sugar, and 1 teaspoon cinnamon in large bowl until moist clumps form. Mix in 4 tablespoons crushed cookies and nuts.
Drop topping evenly over filling. Bake until juices bubble thickly and topping is brown, about 40 minutes.

I went to Google.com and typed in Potassium-rich foods and came up with Buzzle.com which gave me this list of potassium-rich foods.
I have put zucchini in my chocolate zucchini cake and it really made a nice cake - same with my carrot cake - the zucchini works in there too. And, I've had a chocolate sauerkraut cake - the sauerkraut tastes like coconut.

Ok, as everyone seems to have suggested desserts with bananas in, I thought I'd try and give you some other ideas! Bananas are a great source of potassium but there are other things too, for example:
dried apricots/dates/figs, kiwis, melon, milk, orange juice, oranges, pears and plain yogurt.
